Now summer is well on it's way and the weather is beautiful, we've been using lockdown to get the garden set up for a bumper load of veg. Also setting up a wheatgrass factory and lining up the sprouting jars.
We're so lucky to have the Derbyshire countryside on our doorstep. Dehydrated buckwheat crunchies, raisins, walnuts, raw coconut flakes, linseed, sunflower seeds and pumpkin seeds. Serve with fresh fruit and a splash of almond milk.
If you're feeling like you're getting a cold, sauté onion, garlic and ginger in water, then add red lentils and vegetable stock and simmer for a while. Add to this cauliflower, cumin, ground coriander, turmeric, chilli, nooch, salt and pepper and a slug of tamari. When it's cooked down blend with a stick blender and add chopped kale. Finish with a squeeze of lemon juice. Very comforting for lunch with a chunk of homemade bread if you're extra hungry, it is very filling on its own.
And today's smoothie - banana, pineapple, raisins, lettuce, wheatgrass powder, baobab powder, milled flaxseed, hemp seeds, chia seeds and water. Yummy.

Dug around the fridge to see what needed eating - sweet potatoes, potatoes from the garden, butternut squash, leeks, onions, courgettes, runner beans, kale and chard - then added tin of white beans and some cooked quinoa, tin of tomatoes and vegetable stock, bit of miso, seasoning and nooch. As I was about to serve it I added some freshly roasted beetroot (from the garden) and the greens from the beets, sprinkled some more nooch over the top and added a splurge of cashew cream. Had it with crusty bread or rice cakes. Yum

Onion, leeks, garlic (lots), grated fresh ginger, carrots, butter beans, turmeric, cabbage, fennel, kale, spinach and salt and pepper with vegetable stock. Warming and delicious. Serve with crusty home baked bread.
Just purchased a Foodsaver Vacuum Sealer from Lakeland, hopefully it will free up space to freeze veggies for the winter.
