Almond flax crackers
Ground flax seeds
Almond meal (ground almonds)
Shallots
Sundried tomatoes
1 apple
Ground cumin
Ground coriander
Garlic powder
Cayenne pepper
S & P
Depending on the quantity you want to make. I used about 2 cups of flax seeds to one cup of ground almonds. As many shallots and sundried tomatoes as you fancy, 1 apple and seasoning to your taste - if you want to add more herbs, do so. I mixed the flax and almonds in a large bowl and put everything else into a food processor and blitzed it. Then added that to the dry ingredients, mixed well and added water to bring it to a kind of dough. Spread on paraflexx sheets and dehydrate for about 8 hours. turn, remove sheets and dehydrate overnight. The almonds in the crackers make them deliciously crunchy, they're also quite alkaline.

Birthday Cake!
Cake
3 cups dried figs
1 cup almonds (soaked)
1 cup almonds, dry
1/4 tsp ground ginger
1/4 tsp nutmeg
1 cup dried sour cherries or cranberries
2 cups thawed mixed forest fruits
1/2 cup poppy seeds
Jam
2 cups thawed berries of your choice
1 dessertspoon raw cacao powder
6-8 dried prunes
Cashew Cream
3 cups cashews
juice of 1-2 oranges
1 tbsp water
Vanilla extract.
Blend all the cake ingredients in a food processor. I do it in a couple of batches. Line a cake tin with cling film and spread half the mixture into the tin. Cover with plate and turn out.
Blend all the jam ingredients with a hand blender.
Blend all the cream ingredients.
Spread half the jam onto the cake base, then spread half the cream on top. Turn out the other half of the cake and place it on top of the spread half (be brave!). Spread the rest of the jam on top of the cake. I then piped the rest of the cream around the edge of the cake and topped each blob with a dried cherry.
Should last for a few days in the fridge, if you can stop people stealing it!
Feel free to use fresh fruit in season, or any other fruit you fancy.
Strictly for special occasions!

Flax and Sunflower Seed Bread.
2 cups flax meal
Onion (I used 1/2 white and a small red)
2 apples
2 tomatoes
2 cups sunflower seeds
Salt
Garlic
Fresh coriander
Braggs Liquid Aminos (optional)
Grind the flax seeds and put in a bowl.
Process the other ingredients and mix into the flax - the mixture should be quite wet, so you may need to add a bit of water.
Dehydrate on Paraflexx sheets for 6 hours, turn and remove sheet and continue dehydrating. I left it a little moist so that it had a 'bread' like texture. If you dry it more it will be more like a cracker. See what you fancy. Delicious with raw almond butter, lettuce and tomato.

Cor-ackers!
2 cups flax meal
Sundried tomatoes (soaked - keep the soak water)
3 shallots
Oregano
Cumin
Cayenne
Coriander
Salt
Nutritional yeast (optional - not raw)
Grind flaxseeds in a coffee grinder until they make a powder, put in large bowl. Put the remaining ingredients into a food processor - don't process too fine. At these items to the flax meal and mix thoroughly. Pour the tomato soak water into the bowl until you get a dough and leave to sit for a few minutes. Spread the mix thinly on the paraflexx sheets and score into the size you want the crackers. Different dehydrators take different times, so check after 6 hours and turn the crackers over, removing the sheets. Carry on dehydrating until dry and crispy.
Quantities have not been specified so that you can choose how much you want to make.
